Welcome to feeling overwhelmed!

The gluten free casein free (GFCF) diet can be really simple. You don't need every cookbook for gluten free living or all sorts of expensive ready-made products to eat GFCF. I discovered this the hard way. I bought 3 of the GFCF diet books and haven't hardly used them. I tried using the bean flours and they tasted weird. Here are the first things to know about the diet to make it easy on the whole family:

1. Dinner meals will consist of a meat, vegetable and fruit. Very simple eating.


2. Replace your white or wheat flour with a combination of white or brown rice flour, potato starch flour, and tapioca flour. This is called the Bette Hagman flour mixture. Mix as follows:
2 parts rice flour
2/3 part potato starch flour
1/3 part tapioca flour


3. Buy xanthum gum at a health food store. You will add this to your flour mixture for all bread products. Xanthum gum replaces the sticky gluten in wheat.
