This is such and easy and quick RICE and BEANS recipe that everyone will love. My kids absolutely love it and clear their plates when they eat it. Try it, you'll like it.
Simple RICE and BEANS
2 + Tbls. Extra Virgin Olive Oil
1/2 - 1 Onion
2 Cloves Garlic
1 Undrained can Black Beans (or any beans)
1 tsp. Cumin
Onion powder, garlic powder (to taste)
Rice
Avocado (optional)
In large skillet or wok, heat the olive oil until hot and bubbly. Saute the onion and garlic together until onion is transparent and garlic is just browned. Add in the UNdrained can of black beans and begin to simmer on low. For a larger family, use 2 cans of beans. Add in some cumin and other spices listed to taste. Simmer for 15 minutes or so until the beans are soft. Serve over steamed rice and garnish with sliced avocado, if desired. There's a party in my tummy, so yummy, so yummy!
